Birthday Cake: Barefoot Contessa Coconut Cake

It's a birthday! A 35th one for the hubs this year. To celebrate, I baked him a coconut cake from Ina Garten's Barefoot Contessa At Home cookbook. Fellow blogger Nosh Girl has used this recipe before so I knew it was good. It was so good that even after we came home from a 3 course meal that included dessert, we shared two slices (just one wasn't enough). I made it healthy by adding fresh strawberries.
Following Ina's recipe, I needed 5 sticks of butter for the cake + frosting. Really? Wow. You can find the rest of her recipe here.

Instead of sweetened coconut shreds, I somehow ended up with unsweetened coconut flakes. It was much finer and drier but still tasted good and actually I liked it wasn't as sweet.

Since this was the first time making this recipe, I reserved some batter for "test" mini cupcakes. 
The recipe said to bake 45-55 minutes. After 45 minutes, it seemed overbaked. I'd check in on it for a golden brown, mine was just brown. To decorate the top with sliced strawberry halves, first i measured halfway to see how much strawberries to set aside before chopping the rest up for the filling. 
I mixed the chopped strawberries with some frosting to fill between the two layers of cake.
It was a hit with the hubs. Happy Birthday!

did you use a mixer to mix everything? you should take Jennie's from home. ha ha :) Looks delish!
