Veggie Overload

I got a little overzealous at the grocery store and farmer's market today w/the fruit and veggie. Maybe it's b/c I've been eating burgers and fried food since Friday night. :D I opened my frige and took an inventory and it feels like a lot! Any ideas to use all of this in 1.5 weeks before it goes bad?

Zucchini - zucchini bread (smitten kitchen's recipe looks tasty; I'm doing this later today)

Cherry tomatoes, cucumbers, basil, maybe one of your corn + an onion (scallion, red or white) and olive oil for bruschetta

Cilantro - you can chop and freeze it for later

Good luck!

i also vote for zucchini bread! you could make a frittata with swiss chard and corn, and/or with any of the vegetables you mention!

sometimes i cook ravioli and make a tomato sauce, and cook greens like swiss chard in the sauce for some extra health/oomph.

You can make a pasta (pesto) salad with all of the veggies! if you keep your cilantro in a cup of water, it will last longer.
